Care and Maintenance:
Before cooking in your new pan first wash it thoroughly by
hand in hot soapy water. Dry with a soft
towel. Now you are ready to season the pan. Use a high smoke point oil such as
peanut oil and place a few drops in the pan and spread over the entire lining
do not let any get on the copper. Now wipe off any excess and heat the pan in an
oven to 350 for 1 hour. Wipe clean and the pan is now seasoned and ready. It?s not hard to keep your new pans clean by
following these simple steps. After cooking in the pan soak the pan in hot
soapy water for a short period. The food will release fro the pan and you can
wipe out with a sponge or a plastic scruffy. The copper exterior will return to
its shiny self with a gentle rubbing of Copperbrill polish. Copperbrill needs
no hard rubbing it acts as an anti- oxidant and removes the discoloration. Dry
the pan well and put away. Never put a copper pot in a dishwasher. The special
soap they require use strong alkalis that will ruin the pan and rust the
handle.

Copper is considered by those in the know to be the best
material for cooking. It responds quickly to heat and is the quickest to
respond to no heat. This means a boiling or pan that is to hot will stop faster
then any other pan. Your sauce will more likely be saved with a copper pot then
with any of the others. Copper heats with no hot spots that can burn the food.
